Huesos de Santo.

The bones of saint are desserts made of marzipan (almond paste), white in color and elongated and cylindrical (similar to that of a bone with its marrow), originally filled with sweet yolk reminiscent of lukewarm. Spain are characteristic in the pastry shops for the celebration of the dates close to All Saints’ Day (first of November), along with the buñuelos. Their presentation is sometimes reminiscent of the reliquaries.

For the marzipan: 250 g. ground almond
200 g. of sugar
75-100 ml. Water
The zest of a lemon
Icing sugar (to work the dough)
For the yolk cream: 4 egg yolks M
100 g. of sugar
50 g. of water
For the final glaze: 200 g. icing sugar
5 tbsp. of water
