The cocido mate (in Portuguese chá mate) is a typical infusion of the gastronomies of the countries of the Southern Cone of America: Paraguay, Argentina, Bolivia, Brazil and Chile, with a significant consumption in Paraguay. The cooked mate is obtained when yerba mate is dissolved in hot water (by different cooking methods), the result is a transparent green aromatic liquid, with a mild bitter taste, whose color can vary more or less dark depending on the the concentration of yerba mate dissolved in the water.
